we spent the weekend encouraging fall to arrive by apple picking at soon’s orchard. it’s never too early to start fall activities in my mind (no matter what those summer people tell you!!!). with the 25 pounds of apple we picked, we have already made apple/strawberry/spinach juice, applesauce, apple butter & an apple pie (recipe below).
apple pie filling (you can use a ready made pie crust or make your own, my favorite crust recipe is here…)
combine about 6 medium apples (thinly sliced), 3/4 cup sugar, 2 tablespoons flour, 3/4 teaspoon cinnamon, 1/4 teaspoon salt, 1/8 teaspoon ground nutmeg, 1 tablespoon lemon juice in a large bowl. add to pie crust and bake 40 minutes at 425 degrees.
